Agave Peach Jam

 

Agave Peach Jam

3 cups of finely chopped or mashed fruit
1 3/4 cup of Agave Nectar
1 packet of no sugar needed pectin
1 Tablespoon Lemon Juice

Set your 3 cups of mashed fruit aside. Vigorously boil your agave, pectin and lemon juice for 1 minute. It has to be at a rolling boil that you can't stir down.

Add your mashed fruit to your pot of the boiled pectin mixture. Stir for 1 minute until nicely blended.

Pour into freezer jam jars of your choice. I have seen them in plastic and glass varieties. Label and love it!

Canning Peaches with Agave Nectar

Fruit (You will need about 5 good sizes peaches to fill one quart jar)

Jar grabber (to pick up the hot jars), Jar funnel, lid magnet. You can usually find a packaged deal of this equipment at your local grocery stores, Wal-mart, K-mart, etc.

At least 1 large pot

Large spoons and ladles

Canning Jars (quart jars including the lids and rings) I prefer the Wide Mouth jars.

Agave Nectar (1 ½ Cups of Agave Nectar for every 6 Cups of Water)

1 Water Bath Canner

 

Step 1 Wash your Jars and Lids in your dishwasher or boil them for about 10 minutes to sterilize.

 

Step 2 Wash your peaches.

 

Step 3 Peel your peaches. Follow the blanching technique from the video above. It works great!

 

Step 4 Cut your peaches. Remove any brown spots. If I’m filling a lot of jars, I’ll just cut he peaches in half. After cutting the peaches, you’ll want to place them in cold water with a Tablespoon of lemon juice to stop them from turning brown from the air.

 

Step 5 Pack your peaches into your canning jars. Leave about 1” space from the top of the jar. After packing them in, pour in your Agave Nectar water solution leaving ½” from the top.

 

Wipe the rim of the jar with a damp cloth for a good clean seal. Tighten the lid firmly.

 

Step 6 Place the jars in your water bath. Normally, you will have 1” of water from the top of the lid boiling in the bottom of your water bath. Boil your peaches for about 30-35 minutes. Below is the USDA recommendations for canning peaches.

Step 7 Remove the jars and allow them to cool. I usually lay a few towels across my counter top and place the jars on them to cool. If the lids have sucked down, you have a good seal. If the lid has popped up, you can remove the lid and try a different one (just repeat the process)… or you can put your peaches in the refrigerator and eat them in the morning!

 

Step 8 Store your peaches for a year (possibly longer) in a cool dark place usually in a basement if you have on. They will taste GREAT!
